Trattoria Al Fogher

FOGHER’s speciality is codfish. It seems to be the shipwreck of a Venetian merchant in the mid-sixteenth century that started the tradition of the ‘fish from the north’, which has become the ubiquitous protagonist of many regional dishes. Here it is served in the Veneto classic style, mantecato, stewed, Vicenza-style, but you can also try more creative recipes such as cod lasagne or cod cooked with beer. The cuisine is typical with variations on contemporary tastes, while the pizzas with long leavening and very low yeast content are the result of experiments and taste research to make them easy to digest ‘without drinking at night’.
